4 cups finely chopped cooking apple
½ cup unsweetened orange juice, divided
1 ½ tsp ground cinnamon
½ cup stick margarine, softened
1 cup sugar
1 (8 oz) carton fat-free egg substitute
¼ cup skim milk
3 cups sifted cake flour
2 tsp baking powder
½ tsp salt
2 ½ tsp vanilla extract
Vegetable cooking spray
2 TBS brown sugar
Combine apple, ¼ cup orange juice, and cinnamon;
set aside.
Beat margarine at medium speed of an electric
mixer until creamy; gradually add 1 cup sugar, beating until light and fluffy (
about 5 minutes). Add egg substitute;
beat at medium speed 4 minutes or until well blended.
Combine remaining ¼ cup orange juice and
milk. Combine flour, baking powder, and
salt, and add to margarine alternately with milk mixture, beginning and ending
with flour mixture. Stir in vanilla.
Pour half of batter into a 10-inch tube pan coated
with cooking spray; top with half of apple mixture. Pour remaining batter into pan, and top with
remaining apple mixture; sprinkle with brown sugar.
Bake at 350 for 1 hour or until a wooden pick
inserted in center comes out clean. Cool
in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire
rack.
