Citrus Sunshine Sodas - Unknown Cookbook



3 cups Citrus Ice Milk (recipe follows)
¼ cup frozen orange juice concentrate, thawed and undiluted
1 (8 oz) can unsweetened crushed pineapple, undrained
4 cups lemon-lime carbonated beverage, chilled and divided

Prepare Citrus Ice Milk; freeze.
Combine juice concentrate and pineapple in container of an electric blender; cover and process until smooth.  To serve, spoon 3 tablespoons juice mixture into each of 6 tall glasses.  Spoon ½ cup Citrus Ice Milk into each glass.  Add 2/3 cup carbonated beverage to each glass.  Serve immediately.

Yield : 6 servings

Citrus Ice Milk
¾ cup sugar
1 (4 oz) carton fat-free egg substitute
2 tsp grated orange rind
1 tsp grated lemon rind
1 ¼ cups orange juice
¼ cup fresh lemon juice
1 cup evaporated skimmed milk
½ cup 2 % low-fat milk
Combine sugar and egg substitute in a large bowl.  Beat at medium speed of an electric mixer 3 minutes or until sugar is dissolved.  Add orange rind, lemon rind, orange juice, and lemon juice; beat until blended.  Stir in milks.
Pour mixture into freezer container of a 2 quart hand-turned or electric freezer; freeze according to manufacturer’s instructions.  Spoon into a freezer-safe container; cover mixture, and freeze at least 1 hour.  
Yield : 5 cups
