Salt and Pepper
1 tablespoon sun-dried tomato pesto per person
1 tablespoon feta cheese per person
1 slice of country ham per person
1 tablespoon margarine per person
1/2 teaspoon dried oregano per person
For each serving lay a chicken breast on a large square of heavy duty aluminum foil. Sprinkle with salt and pepper. Spread the tomato pesto over the chicken, top with the cheese, and wrap a slice of ham completely around the chicken and cheese. Top with margarine and sprinkle with oregano. Wrap tightly in the foil, rolling ends to completely seal the package. Freeze or refrigerate.
When ready to eat, place packages directly in hot coals for 15-18 minutes. Check to see if the chicken is cooked through; rewrap and cook a little longer if necessary.
