Stuffed Pockets - The Derrick Cookbook 1998



1 pound bread dough (thawed)
1/2 cup frozen broccoli (chopped and thawed)
1/2 cup ricotta cheese
1/2 cup mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon hot pepper sauce
1/2 cup diced Canadian bacon

Heat oven to 400 degrees. Spray baking sheet with Pam. Cut dough into 4 equal parts. Roll each piece into oval 8x6. Squeeze out excess water from broccoli, put in a bowl with all cheeses, pepper sauce and bacon and stir. Spoon filling lengthwise down center. Fold over pressing edges to seal. Place on baking sheet. Cut 2 slits in top of each to vent steam. Bake at 400 degrees 15 minutes or until golden brown.
