"Fiesta" Breakfast Casserole - The Fruit of the Spirit Cookbook



1 pound sausage, crumbled
or
1/2 pound bacon, cut up
or
1 pound ham, cut into bite-size pieces
6 eggs 
3 cups milk
1 teaspoon dry mustard
1/2 teaspoon salt
Cayenne pepper, to taste
4 oz can green chiles, cut up
10 -12 oz sharp cheddar cheese, grated
9 slices white bread

Choose one of the three meats. Brown meat and drain, if needed. Butter one side of each slice of bread. Lay buttered-side of bread down in a 9x13 inch baking dish. Cut each slice into quarters. Top with meat; next sprinkle cheese and green chiles. Beat eggs, milk and spices together. Pour over top. Refrigerate overnight. Bake, uncovered at 350 for 45 minutes to 1 hour or until slightly browned or when inserted knife comes out clean.

Optional: The meat choices may be substituted for broccoli, tomato, and green peppers.
