Fancy Fish Sticks - Making the Cut (Jillian Michaels)
1 1/2 pounds grouper or other white fish fillets (I used tilefish)
1 tablespoons fresh lime juice
1 tablespoon fat-free mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon freshly ground black pepper
1/2 cup fresh bread crumbs ( I used panko)
1 1/2 tablespoons butter
2 tablespoons chopped fresh parsley
Preheat oven to 425.
Place fish in an 11x7 inch baking dish coated with cooking spray. Combine lime juice, mayonnaise, onion powder, and black pepper in a small bowl, and spread over fish. Sprinkle with bread crumbs; drizzle with butter. Bake for 20 minutes or until fish flakes easily when tested with fork. Sprinkle with parsley and serve.
Makes 4 servings.
