Chicken Chillupe (Enchiladas) - Grade A Recipes

2 cans boned chicken
2 cans cream of chicken soup
1 pint sour cream
Green onions (1/2 cup or less)
1 small can diced green chiles, or less
1 pound Jack cheese
1 pound longhorn cheese
2 dozen tortillas

Mix together in bowl:
2 cans of chicken
1 can cream of chicken soup
1 cup sour cream

Fry just to soften 2 dozen tortillas. Place spoonful of mixture in tortillas and add a little of both cheese. Roll and fasten with toothpick. Mix together 1 can cream of chicken soup and 1 cup sour cream. Spread all over tortillas and top with remaining cheeses. Make at 400-450 degrees until top is bubbly. 30-45 minutes.
