2 cups all-purpose baking mix ( I added 1/2 cup more to make a thicker batter)
3 tablespoons sugar
2 large eggs
3/4 cup orange juice
3/4 cup milk

Combine baking mix and sugar in a large bowl. Whisk together eggs, orange juice, and milk in a small bowl; add to dry ingredients, whisking until just moistened.
Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle. Cook pancakes, in batches, 3 minutes on each side or until tops are covered with bubbles and edges look cooked; turn and cook 2 minutes. Serve with Orange Vanilla Syrup.
Orange Vanilla Syrup
1 cup sugar
3/4 cup orange juice
1 tablespoon corn syrup
1 teaspoon vanilla
Bring all ingredients to a boil in a heavy saucepan over medium heat. Reduce heat, and simmer, stirring occasionally, 5 minutes or until sugar dissolves.
