Green Chile Burgers - Grilling for Life



Green Chile Sauce

2 poblano chiles, grilled
1 medium red onion, grilled and chopped
2 cloves garlic, chopped
2 tablespoons chopped fresh epazote, oregano, or cilantro leaves
1/4 cup cold water
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Combine all of the ingredients in a blender and blend until smooth. The sauce can be made up to 8 hours in advance, covered, and kept refrigerated. Bring to room temperature before using.

Burgers

2 pounds ground beef, 90% - 95% lean
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 slices provolone cheese, 1 ounce each
4 grain hamburger buns
4 romaine lettuce leaves
4 thick slices beefsteak tomato
4 pickled jalapenos, thinly slices ( or pickled jalapeno rings)

Heat your grill to high.
Shape the ground beef with your hands into 4 round patties about 1 1/2 inches thick and season each burger on both sides with the salt and pepper. Grill until charred on both sides and cooked to medium, about 8 minutes.
Place a slice of the cheese on each burger, close the lid or loosely cover with foil, and cook until the cheese has just melted, about 1 minute. Transfer to a cutting board and let rest for 5 minutes.
Place the burgers on the buns and top each with green chile sauce, lettuce, tomato, and pickled jalapeno before serving.

Makes 4 servings.
