Beer and Cheese Soup - Betty Crocker One Dish Meals

2 tablespoons butter or margarine
1 medium onion, chopped (1/2 cup)
1 can or bottle (12 ounces) beer
1 medium carrot, finely chopped (1/2 cup)
1 medium stalk celery, finely chopped (1/2 cup)
2 cups chicken broth
1 teaspoon salt
1 teaspoon ground cumin
1/4 teaspoon ground nutmeg
Dash of ground cloves
Dash of pepper
1 cup sour cream
4 ounces Cheddar, or Monterey Jack cheese, cut into 1/4 cubes ( 1 cup)

Melt butter in 2 quart saucepan over medium heat. Cook onion in butter, stirring occasionally, until tender. Stir in beer, carrot, and celery into butter. Heat to boiling; reduce to low. Cover and simmer 10 minutes.

Stir in remaining ingredients except sour cream and cheese. Heat to boiling; reduce heat to low. Cover and simmer 30 minutes; remove from heat. Stir in sour cream. Sprinkle with cheese.

Makes 5 servings.
