Southwest Chicken Burgers - 5 Ingredient Grilling

3 tablespoons finely chopped green sweet pepper
3/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound uncooked ground chicken
1 cup shredded Monterey Jack cheese with jalapeno peppers
4 kaiser rolls, split and toasted
1 medium avocado, seeded, peeled, and sliced (optional)
Bottled salsa (optional)

In large bowl combine sweet pepper, chili powder, salt, and black pepper. Add ground chicken; mix well. Shape chicken mixture into four 3/4 inch thick patties.

For a charcoal grill, grill burgers on the rack of uncovered grill directly over medium coals for 14-18 minutes or until no longer pink (170 degrees), turning once halfway through grilling. Sprinkle each burger with cheese. Grill 1-2 minutes more or until cheese melts. (For a gas grill, preheat grill. Reduce heat to medium. Place burgers on grill rack over heat. Cover and grill as above.)

Serve burgers on rolls. If desired, top with avocado and salsa.

Makes 4 servings.
