Extra - Creamy Coleslaw - Lighten Up!!
This recipe is adapted from a copycat recipe of KFC's coleslaw from Top Secret Recipes.
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup 1% milk
1/2 cup Hellman's low-fat mayonnaise
1/4 cup low-fat buttermilk
1 1/2 tablespoon white vinegar
2 1/2 tablespoons lemon juice
8 cups very finely chopped cabbage (about 1 medium head)
1 cup grated carrots
In a large bowl, combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice and beat with an electric mixer until smooth. (Or combine in a food processor and process until smooth, then transfer to a large bowl.) Add the cabbage and carrots and toss to blend with dressing. Cover and refrigerate for at least 3 hours before serving.
Makes 8 servings.
