Garden Impossible Pie - Jubilee Cooking
2 cups chopped unpared zucchini
1 cup chopped tomatoes
1/2 cup chopped onions
1/2 cup shredded Cheddar cheese
1/3 cup Parmesan cheese
1 1/2 cups milk
3/4 cup Bisquick
1/2 teaspoon salt
1/8 teaspoon pepper
Heat oven to 400 degrees; grease 10 inch pie pan. Sprinkle zucchini, tomato, onion, and cheeses into pan. Beat remaining ingredients until smooth and pour over vegetables. Bake 30 minutes or until brown and knife inserted into middle comes out clean. Let stand 10-15 minutes to firm.
Note - For 9-inch pie use 1 cup milk, 1/2 cup Bisquick and 2 eggs.
Makes 6 servings.
