Buttery Toffee Cookies - Cookies & Bars



1/2 cup sugar
1/2 cup butter, softened
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 (1.4 ounce) bars chocolate coated toffee, chopped (or 1 - 6 oz package milk chocolate English toffee bits.)

Heat oven to 350 degrees. Combine sugar, butter, egg and vanilla in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (3-4 minutes). Reduce speed to low; add flour, baking soda and salt. Beat, scraping bowl bowl often, until well mixed (1-2 minutes). Stir in chopped toffee by hand.

Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake for 10-12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

Makes 3 dozen cookies.
