Fruit Cocktail Snack Cake - Fantastic Food with Splenda

1 large egg
1 cup Splenda
1 (15 oz) can fruit cocktail, in light syrup (less 2 tablespoons juice)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups all-purpose flour
1 teaspoon vanilla extract

Preheat oven to 325 degrees. Coat an 8-inch square cake pan with nonstick cooking spray.

In a large mixing bowl beat egg, Splenda, and fruit cocktail with hand mixer until smooth.

In a medium bowl sift together dry ingredients.

Fold dry ingredients into fruit cocktail mixture with a whisk; then add vanilla extract.

Pour batter into prepared pan and bake for 30-35 minutes or until top springs back when touched. Cool and serve.

Makes 9 servings.
